Slowly slowly drifting Lord of the Kurisu River The ancient giant salamander, Osansho
The water used for Hirano Brewery’s sake comes from the Kurisu River. The crystal-clear water flows downstream from Mount Motai. Rice paddies, the cry of the birds, the voices of the insects, people’s song. We respond to the sounds of our rural hamlet, and the mountain breeze graces our rice paddies, and our rice grows. When the sake is being brewed, we sing our celebratory songs, to thank the land and encourage the sake. Listening closely to the sounds of the sake mash, the brewer slowly dips the paddle into the mixture, brewing in a cedar barrel, imparting on the sake memories and recollections. The sake is created through the interaction between the earth and the people. People and land resonating together. Gujo Fudoshu.
